INGREDIENTS
This recipe will make about 8 biscuits. They can be frozen.
- 115g Unsalted butter
- 100g Brown sugar
- 95g Flour (plain)
- 1 egg
- 1/2 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp ground cinnamon
- Pinch of salt
- 120g rolled oats
- 120g Raisins or sultanas
- 50g walnuts (chopped)
METHOD
Heat the oven to 180C/350F/gas mark 4.
In a bowl, cream together the butter, sugar, egg and vanilla essence until smooth.
Mix the flour, baking soda, salt, and cinnamon and then add to the mixture in small amounts, whisking or stirring in until well mixed. Add the rolled oats, raisins and walnuts to make a rough mixture. Put the mix into the fridge for an hour or so to cool.
Use a large spoon to scoop biscuit sized amounts onto a baking tray lined with baking paper.
COOKING
Bake for 10 minutes at 180C until a golden colour around the edges but still soft in the middle. Turn out onto a rack to cool. Store in a biscuit tin.
